The high plateau of Minas Gerais, at an altitude of approximately 1,195 meters, offers ideal conditions for the natural process: dry winters, intense sunlight, and cool nights. Through slow drying on the cherry, the Yellow Catucaí variety develops an exceptional natural sweetness.
