At Fazenda São Pedro in the Cerrado Mineiro, the coffee cherries are sun-dried as whole fruits for weeks, until natural fermentation draws all their sweetness into the bean. Yellow Catucaí grown at an altitude of 1,195 meters in one of Brazil's most consistent coffee regions.

Why I roast like this.
Deep, sweet, velvety — almost like a good rum at the end of a long day. Ripe fruits, dried berries, a warm, soft depth. Lightly roasted enough to let the fruit breathe freely.
