Order & Shipping

How quickly will my order be shipped?

We roast in small batches weekly and ship 1–2 days after roasting. The goal: you receive the coffee in its most aromatically active phase — typically 3–7 days after the roast date. Orders placed by Thursday are usually shipped within the same week. You will receive a shipping confirmation with a tracking link after each roast date.

When is shipping free?

Shipping is free within Germany for orders of €35 or more. Below this amount, a flat shipping fee of €4.90 applies. Separate shipping costs apply for Austria and Switzerland — these are displayed transparently at checkout before you pay.

Which countries do you ship to?

We currently deliver to Germany, Austria, and Switzerland. For other European countries — particularly for catering orders — please inquire directly at: hallo@ninefine.de. We will always find a solution.

Can I cancel or change my order?

Cancellations and changes are possible as long as the order has not yet been shipped. Please email us as soon as possible at hallo@ninefine.de — always including your order number. Since we ship immediately after the roasting date, the window of time is sometimes short. The sooner you get in touch, the better.

How long does delivery take after shipping?

Within Germany, delivery usually takes 1–2 working days after dispatch. Austria and Switzerland: 2–4 working days. We ship with DHL. You can check the exact status of your order at any time using the tracking link in the shipping confirmation.

What happens if my package arrives damaged or gets lost?

Get in touch with us immediately at hallo@ninefine.de — preferably with a photo of the package and your order number. We will, of course, replace any damaged or lost packages. Coffee quality doesn't just start with the roasting — the shipping has to be right, too.

Payment & Returns

What payment methods do you accept?

We accept all major payment methods: credit card (Visa, Mastercard, American Express), PayPal, Klarna (invoice, installment purchase), Apple Pay, Google Pay, and SEPA direct debit. All payments are processed securely via Shopify Payments.

Can I return coffee?

Since coffee is a food product, opened items generally cannot be returned. Unopened products can be returned within 14 days of receipt—please notify us briefly by email beforehand. If you are not satisfied with a product, please get in touch with us anyway. We will find a solution together—that is more important to us than the fine print.

What should I do if I ordered the wrong coffee?

Email us at hallo@ninefine.de within 24 hours of placing your order. As long as the order has not yet been shipped, we can often still exchange the variety for you. For the future: You can taste all varieties on-site at our café at Hirschgartenallee 24 before you buy.

Is my payment secure?

Yes — all transactions are processed via Shopify Payments, a PCI-DSS compliant payment provider. We do not store any credit card information on our servers. The connection to our shop is SSL-encrypted.

Coffee & Quality

What does 'specialty coffee' mean?

Specialty coffee is the highest quality category in coffee — defined by a cupping score of at least 80/100 points, awarded by certified Q-graders. Unlike commercial coffee, every specialty bean represents a specific origin, a specific farm, and a specific processing method. You taste terroir, process, and care — not just caffeine. Nine Fine works exclusively with specialty beans. Jovana personally inspects every origin before purchase.

What does the cupping score mean?

The cupping score is the international rating scale for coffee quality, developed by the Specialty Coffee Association (SCA). Certified Q-Graders — like Jovana — evaluate coffees blindly based on 10 criteria: Fragrance, Aroma, Flavor, Aftertaste, Acidity, Body, Balance, Uniformity, Clean Cup, and Sweetness. A coffee is considered specialty from 80 points upwards. Exceptional lots range between 87–92+. Most Nine Fine varieties fall in the 85–90 point range.

What do the processing methods — Natural, Washed, Honey — mean?

The processing method significantly determines the taste of the coffee: → Washed: The bean is separated from the fruit immediately after harvesting. Result: clear, clean flavors — ideal for floral and fruity notes. → Natural (dry): The fruit remains around the bean during drying. Result: full-bodied, fruit-forward coffee with higher sweetness. → Honey: A middle ground — the fruit skin is removed, but part of the pulp remains. Result: fuller-bodied than washed, cleaner than natural. Every variety at Nine Fine has the processing method clearly stated on the packaging.

Do you offer single origin and blends?

We focus on single origin — coffees from a single source, often a single farm or cooperative. This allows for full traceability and ensures the character of the origin remains clearly recognizable in the cup. We develop individual blends specifically — primarily for espresso, where balance and consistency throughout the season are important. Current availability is always in the shop.

When was my coffee roasted?

You can find the exact roast date on every package. Our recommendation: → Espresso: 7–14 days after roasting — during this time, CO₂ is released (degassing) and the aromas develop optimally. → Filter / Pour Over: drinkable from the roast date, continues to develop further in the first 2–4 weeks. We ship so that you receive the coffee at its peak — not too fresh, not too old.

How do your varieties differ in taste?

Each variety has its own flavor profile, which is described on the packaging and in our shop. As a rough guide: → Ethiopia: often floral, jasmine-like, bergamot, red fruits — classic specialty character. → El Salvador / Costa Rica: chocolatey, caramel-like, nutty — approachable, often ideal for beginners. → Brazil: full-bodied, creamy, darker notes — popular for espresso and milk-based drinks. You can taste all of our varieties in the café before you buy.

Origin & Sustainability

How do you select your green beans?

Jovana blind-tastes every origin — without knowing which farm or importer the beans come from. Only lots that meet her sensory quality standards make it into the roastery. The blind tasting is followed by the purchasing decision: only then is the price negotiated — not the other way around. Quality determines the selection, not the price.

Do you work with fair prices for producers?

Yes — we source our raw beans through specialized importers who document transparent supply chains and fair farm prices. The price producers receive for our lots is significantly higher than the commodity market price. We believe: Good coffee is only possible if the people who grow it can make a living from it.

How sustainable is your packaging?

Our packaging features an integrated one-way valve, which allows coffee to degas after roasting without letting oxygen in. This extends shelf life without the need for preservatives. We are continuously working on further developing our packaging materials. Please contact us directly for the latest information on this.

Are you certified — organic, Fairtrade, Rainforest Alliance?

We currently do not hold any of these seal certifications — not because these values aren't important to us, but because many of our lots far exceed the requirements of these seals, yet remain officially uncertified due to the small size of the farms. Transparency is more important to us than a seal: Jovana can explain how every origin was produced and why it ended up at Nine Fine.

Grind size & preparation

Which grind setting should I choose?

It depends on your device: → Portafilter / Espresso machine: 'Portafilter ground' — fine grind for 9 bar pressure. → Bialetti / Moka pot: 'Bialetti & AeroPress' — medium-fine. → AeroPress: also 'Bialetti & AeroPress'. → Filter / Pour Over / Chemex: 'Filter coffee ground' — medium to coarse grind. → French Press: 'Filter coffee ground' — coarse, to minimize sediment. → Own grinder: always 'Whole bean' — freshly ground just before preparation is the best option for every method.

What is the correct grind setting for my fully automatic coffee machine?

For fully automatic machines, we recommend exclusively using 'whole bean'. Fully automatic machines have an integrated grinder that regulates the grind size internally — ground coffee would strain the system and impair extraction. Tip: Set your fully automatic machine to a slightly finer grind than standard — specialty coffee develops much better with more precise extraction than commercial blends.

Which water should I use for coffee?

Water makes up approx. 98–99% of your cup — making it the most important variable after the coffee itself. Filtered water with a total hardness of 50–150 mg/l (approx. 3–9 °dH) is ideal. Very hard tap water (as is common in Munich) can dampen the flavors and cause limescale buildup in the machine. Recommendation: a simple Brita filter or a scale filter for the machine is sufficient in most cases.

What is the correct coffee-to-water ratio?

As a starting point, we recommend: → Filter / Pour Over: 60 g of coffee per liter of water (1:16 to 1:17 depending on the variety). → Espresso: 1:2 to 1:2.5 — i.e., 18 g of coffee → 36–45 g of extract in approx. 27–32 seconds. → French Press: 60–70 g per liter, 4 minutes steeping time. → AeroPress: 15 g of coffee to 200 ml of water, 2–3 minutes as a baseline. No rule is set in stone — your taste decides. Our blog guides go into more depth on the respective methods.

Why does my espresso taste sour or bitter?

Sour and bitter are the most common extraction problems—both have clear causes: → Too sour (underextracted): grind size too coarse, water temperature too low, brewing time too short. Solution: grind finer, increase temperature (92–94°C). → Too bitter (overextracted): grind size too fine, water temperature too high, brewing time too long. Solution: grind coarser, lower temperature slightly. Important: Specialty coffee naturally has more acidity than commercial roasts—this is not a defect, but a sign of freshness and quality.

Storage & Freshness

What is the best way to store my coffee?

The four enemies of coffee are: oxygen, light, moisture, and heat. Best storage: in the original packaging (with one-way valve), sealed airtight, at room temperature, in the dark — for example, in a cupboard or an opaque canister. Do not store in the refrigerator: temperature fluctuations when taking it out cause condensation, which damages the coffee.

Can I freeze coffee?

Yes — but only once and done correctly: Divide the coffee into airtight portion bags (e.g., vacuum bags) and freeze them. Before use, let the bag thaw at room temperature — never open the packaging beforehand. Frozen coffee will keep for up to 6 months without loss of aroma. Once thawed, the coffee should be consumed within 2 weeks and must not be refrozen.

What does the one-way valve on the packaging mean?

Freshly roasted coffee releases CO₂ in the days following the roast — a process known as 'degassing'. The one-way valve allows this gas to escape without letting oxygen into the packaging. Without a valve, the packaging would inflate or you would have to wait to pack the coffee — at the expense of freshness. This means you can pack and ship immediately after roasting — the valve takes care of the rest.

How long does the coffee last?

Unopened and stored correctly: 8–12 months from the roast date. After opening: consume within 4–6 weeks so that you enjoy the aromas at their best. Whole beans always stay fresh longer than pre-ground coffee — another reason to own a grinder.

Café & Location

Where do you find the café?

Nine Fine Roastery & Bar Hirschgartenallee 24 80639 Munich (Neuhausen-Nymphenburg) Directly at Hirschgarten — with a large terrace in summer. Accessible by public transport via S-Bahn (Laim) or U-Bahn (Rotkreuzplatz) + a short walk.

Can I buy and taste the coffee on-site?

Yes — all Nine Fine varieties are available directly in the café, including whole beans to take home. You are welcome to taste all varieties on-site before you buy. Our team will be happy to explain the differences between our current varieties and help you choose the right grind for your equipment at home.

Can I visit the roastery in Wörthsee?

The roastery in Wörthsee is not a public café — production takes place there exclusively. For visit requests (e.g., for B2B partners or specialist groups), please inquire directly at: hallo@ninefine.de Everything related to the coffee itself — tasting, buying, asking questions — takes place at the café on Hirschgartenallee.

Do you supply restaurants, cafés, hotels, or offices?

Yes — Nine Fine Roastery supplies restaurants, hotels, co-working spaces, and offices. We work with businesses that value quality — not volume at any price. For a personalized quote, please email hallo@ninefine.de or use the contact form on our B2B page.

Are there volume discounts for recurring orders?

Yes — for regular purchases and larger quantities, we offer individual terms. The model depends on the quantity, frequency, and selection of varieties. Get in touch — we will work together to find a model that makes sense for both sides.

Do you offer barista training or technical support?

Yes — for our B2B partners, we offer training on preparation methods, machine settings, and product knowledge upon request. Jovana provides personal training or, if necessary, refers you to specialized partners. Our goal: the coffee served to the guest should taste exactly as it does when it leaves our roastery.

Can we develop our own Nine Fine house blend?

Yes — for long-term partners, we develop dedicated roast profiles or blends upon request that are roasted exclusively for your business. The minimum order quantity and the process depend on the specific project. Email us for an initial consultation: hallo@ninefine.de

Gifts & Vouchers

Do you offer gift certificates?

Yes — Nine Fine gift vouchers are available in the online shop and are sent via email. The voucher code is available immediately after purchase and has no expiration date. Vouchers can be redeemed for all products in the shop — including directly at the till in the café.

Can I order coffee as a gift set?
